The Monge family has been growing coffee for generations, however, the Quebradillas farm in particular was started by father Johel 20 years ago with his son Mathias joining after finishing university. This farm grows numerous varieties but they're most known for Geisha, which has won the Cup of Excellence competition twice. After picking and selecting only the ripest cherries for processing, they are carefully dried in covered raised beds to protect from excess sunlight, thus slowing down drying and increasing shelf life. Johel and Mathias are both outgoing, fun-loving, and cordial people but beneath this fun exterior, they strive to produce some of the world's best coffees. We are featuring their 2020 harvest, which is the third harvest in a row, and we are so proud to represent their coffees in Canada. After selecting the ripest cherries, the cherries are dried for 20-30 days on covered raised beds to protect it from excessive humidity and sunlight. During this time, their staff moves the coffee every hour until the beans reach a 10.5% of moisture content.
