An exquisite blend of coffees grown at 1800-2200 m.a.s.l. Coffees from this region are brought together from small farm holders and sorted based on quality. This allows small farm holders to receive the quality premiums for their harvesting efforts. These varieties have a deep, complex sweetness and structured acidity. They boast bold notes of fresh fruit and have a creamy body. The Bull Trout Blend will be a continuous offering that will change based on seasonality, taste and availability. The town of Buesaco lies on a ridge high in the Andes mountains of Nariño. The name Buesaco Jardines translates to "Buesaco Gardens" and refers to the lush gardens that are present in coffee farms in this area. This blend is a way of creating larger, more manageable lot sizes from some of the choice farms in Buesaco. This season there are 3 farms that contributed to this blend. The high elevation and diverse microclimate also contribute to the complexity of this coffee. Farmers here work very diligently, carefully selecting only the ripest fruits for production. Cherries are fermented for 24 hours after harvest, and for another 18 hours after being de-pulped. The coffee is then fully washed with spring water and dried for 20 days on a raised patio.
